In its dried form, an Ancho Chile is a Poblano when fresh. Spanish for "wide," this essential chile is widely used in the Mexican culinary Pantheon. Ancho is a common base for dishes, moles, and adobos. Flavor notes include sweet dried raisins, smoke and bitter chocolate. Anchos can also be rehydrated and stuffed - an excellent alternative to the fresh version.
